Beef Noodle Casserole
- 1 pkg. medium egg noodles
- 1/3 c. chopped green onion
- 1 lb. ground chuck
- 1/2 c. sour cream
- 1/4 tsp. salt
- 1 (8 oz.) can tomato sauce
- 2 Tbsp. margarine
- 1/3 c. chopped bell pepper
- 1 (6 oz.) can tomato paste
- 1/4 tsp. sugar
- 1 c. cottage cheese
- Preheat oven to 350u0b0.
- Cook noodles; drain and allow to cool. In a skillet, melt margarine.
- Saute onion and green bell pepper until tender.
- Add meat and brown slowly; set aside.
- In a small bowl, stir together tomato paste, sour cream, sugar and salt and set aside.
- In a large bowl, toss together noodles and cottage cheese.
- Layer 1/2 noodle and cottage cheese mixture into a casserole dish.
- Spread with tomato sour cream mixture, then layer 1/2 meat mixture.
- Layer remaining noodle mixture, then meat. Pour tomato sauce over all.
- Bake 30 to 35 minutes.
