Traditional Tourtiere
- 1 pound Minced Pork
- 1/4 cups Chopped Onion
- 1/2 teaspoons Salt
- 1/2 teaspoons Garlic Salt
- 1/2 teaspoons Sage
- 1 dash Pepper
- 1/4 cups Boiling Water
- 1- 1/2 cup Mashed Potatoes
- 2 whole 9-inch Pie Crusts, Store-Bought Or Homemade
- In a large skillet (preferably cast iron), combine pork, onion, seasonings and water.
- Simmer uncovered until meat is cooked (about 25 minutes), stirring occasionally.
- Cool and skim off fat.
- Stir in potatoes.
- Line a pie plate with half of the pastry.
- Fill with the pork mixture.
- Cover with the second half of the pastry and seal the edges.
- Cut steam vents on top.
- Bake for 10 minutes at 450 degrees.
- Reduce heat to 350 degrees and continue baking until crust is golden brown (about 30 minutes).
