Michael'S Smoked Brisket

  1. Start your
  2. fire
  3. in
  4. smoker with charcoal; let burn 10 minutes and add red oak and hickory wood.
  5. Let burn until wood catches on fire.
  6. Place water pan in and add wine.
  7. Generously season brisket
  8. with
  9. the
  10. Cajun
  11. seasoning,
  12. black pepper and salt.
  13. Place
  14. grill
  15. in smoker and lay brisket on.
  16. Cover with the lid and
  17. let
  18. cook
  19. 2
  20. hours.
  21. Add
  22. water as pan gets dry. Remove brisket
  23. and place on a large piece of heavy-duty foil; cover brisket
  24. with
  25. the
  26. onion
  27. and
  28. jalapeno
  29. slices.
  30. Wrap tightly. Return to smoker and let cook another 6 hours.
