Michael'S Smoked Brisket
- 1 (10 lb.) beef brisket
- Cajun seasoning
- black pepper
- salt
- 1 large onion, sliced
- 4 jalapenos, sliced
- 1 bottle Burgundy wine
- Start your
- fire
- in
- smoker with charcoal; let burn 10 minutes and add red oak and hickory wood.
- Let burn until wood catches on fire.
- Place water pan in and add wine.
- Generously season brisket
- with
- the
- Cajun
- seasoning,
- black pepper and salt.
- Place
- grill
- in smoker and lay brisket on.
- Cover with the lid and
- let
- cook
- 2
- hours.
- Add
- water as pan gets dry. Remove brisket
- and place on a large piece of heavy-duty foil; cover brisket
- with
- the
- onion
- and
- jalapeno
- slices.
- Wrap tightly. Return to smoker and let cook another 6 hours.
