Mother's Scalloped Potatoes Recipe

  1. Peel and cook potatoes in boiling, salted water.
  2. Cold slightly; dice coarsely and set aside.
  3. Make white sauce by combining flour and melted butter in saucepan to create roux.
  4. Slowly stir in lowfat milk.
  5. Continue to stir, cooking over low heat till sauce thickens.
  6. Mix sauce with potatoes and stir in cheese, mixing till cheese melts.
  7. Blend in pimentos.
  8. Check for seasoning.
  9. Pour into 13 x 9 x 2 inch shallow baking dish and bake at 350 degrees for 30-40 min, or possibly till top bubbles and browns slightly.
