BAKER'S ONE BOWL Holiday Macaroons with a Citrus Twist
- 1 pkg. (14 oz.) shredded coconut (5-1/3 cups) (Kosher for Passover)
- 2/3 cup sugar
- 6 Tbsp. matzo meal
- 1/4 tsp. salt
- 4 egg whites
- 2 tsp. grated (optional)
- 1 tsp. almond extract
- Mix coconut, sugar, matzo meal and salt in large bowl.
- Stir in egg whites, grated peel and almond extract until well blended.
- Drop tablespoonfuls of dough onto lightly greased cookie sheets dusted with additional matzo meal.
- Bake at 325F for 20 minutes or until edges of cookies are golden brown.
- Immediately remove from cookie sheets.
- Cool on wire racks.
