Easy Cheesecake
- 1 pkg. lemon jello
- 1 c. boiling water
- 1 (8 oz.) pkg. cream cheese
- 1 1/4 c. plus 1 Tbsp. sugar
- 3 Tbsp. lemon juice
- 1 (13 oz.) can evaporated milk, chilled
- 1 tsp. vanilla
- 1/3 pkg. graham crackers
- 1/2 c. butter, melted
- Dissolve jello in boiling water; add cream cheese, 1 tablespoon sugar and lemon juice.
- Place in refrigerator to set slightly.
- Crush crackers to make crumbs; add 1/4 cup sugar and melted butter.
- Place graham cracker crumb mixture in the bottom of 9 x 13-inch pan.
- Save about 1 cup of crumbs for topping.
- Whip chilled milk; add 1 cup sugar and vanilla.
- Add cream cheese mixture and mix well.
- Pour over crumbs and sprinkle with remaining crumbs.
- Place in refrigerator overnight.
