Tuna, Olive, and Caper Sauce

  1. Drain tuna and reserve brine.
  2. Melt butter in a large saucepan and add flour.
  3. Cook stirring until smooth and golden.
  4. Add milk and reserved brine and gradually stir to a thick smooth sauce.
  5. Season to taste with salt and pepper and stir in parsley and chives.
  6. Add lemon juice; stir well.
  7. Break up tuna into small chunks and add to sauce;heat through.
