Celery & Carrot Kimpira Stir-fry
- 2 stalks celery with leaves
- 1 carrot
- 1 dried red chili (if you want spicy flavor)
- 1 Tbsp sesame oil (or veg. oil)
- 1 tsp sugar
- 2 tsp mirin/sweet cooking sake
- 1 Tbsp soy sauce
- 1 pinch salt
- 1 handful katsuobushi/bonito flakes for dashi (Okay to leave out)
- Slice the celery stalks into 1 cm diagonal pieces.
- Mince the leaves and set aside.
- Cut the carrot into thin matchsticks.
- Heat oil in a frying pan.
- Add the celery stalks and carrots.
- Stir fry for a few minutes on medium until the celery and carrots are starting to get a little softer.
- Add the sugar, mirin, soy sauce and salt.
- Keep stir frying until almost all of the liquid evaporates.
- Add the chopped up celery leaves and stir fry for another 1 - 2 minutes.
- Lastly put in a handful of katsuobushi (if you have it), mix and it's done
- Enjoy!
- Sometimes I like to put some sesame seeds on top too ^^
