Salmon Caesar Salad
- 1/2 c. nonfat mayonnaise dressing
- 1/4 c. grated Parmesan cheese
- 1/4 c. vegetable broth
- 2 tbsp. lemon juice
- 1 tbsp. chopped fresh chervil
- 1 tbsp. red wine vinegar
- 1 clove garlic
- 4 anchovy fillets
- 1/4 tsp. kosher salt
- 1/4 tsp. Freshly ground pepper
- 4 center-cut salmon fillets
- 4 clusters cherry tomatoes on the vine
- Olive oil cooking spray
- 1/2 tsp. kosher salt
- 1/2 tsp. Freshly ground pepper
- 2 small hearts-of-romaine lettuce
- 13 c. nonfat garlic croutons (optional)
- Chervil or parsley leaves (optional)
- Dressing: Whisk dressing ingredients in a small bowl; set aside.
- Prepare an outdoor grill with a medium-hot fire or preheat a stovetop grill pan over medium heat.
- Salad: Lightly coat fillets and tomato clusters with cooking spray, and season with salt and pepper.
- Grill salmon 8 minutes, turning once, clusters 2 minutes, or until lightly charred and skins start to split.
- Place a lettuce half, cut side up, on 4 plates; drizzle each with 3 tablespoons of the dressing.
- Place a salmon fillet on top of lettuce.
- Surround with cherry tomato clusters and croutons.
- Drizzle remaining dressing over salmon.
- Garnish with chervil or parsley, if desired.
