Antioxidant Soup

  1. Heat oil in large pot over medium-high heat.
  2. Saute onions for 5 minutes.
  3. Stir in remaining ingredients except parmesan cheese, and bring to boil
  4. Reduce heat, cover and lightly boil until sweet potatoes are soft.
  5. Approximately 12 to 15 minutes
  6. Sprinkle bowl of soup with parmesan cheese and serve.
