Antioxidant Soup
- 1 tbsp olive oil, extra virgin
- 2 medium white onions (diced)
- 2 large sweet potatoes
- 45 oz kidney beans (drained)
- 1/3 tsp oregano
- 76 oz carton low sodium chicken broth
- 2 1/2 tsp sea salt
- 2 tsp ground cumin
- 1 tsp ground black pepper
- 1 lb fresh baby spinach
- 1/2 lb fresh kale (chopped)
- 4 large chicken breasts (cooked and chopped)
- 1 large red bell pepper (diced)
- 1 tsp grated parmesan cheese
- Heat oil in large pot over medium-high heat.
- Saute onions for 5 minutes.
- Stir in remaining ingredients except parmesan cheese, and bring to boil
- Reduce heat, cover and lightly boil until sweet potatoes are soft.
- Approximately 12 to 15 minutes
- Sprinkle bowl of soup with parmesan cheese and serve.
