Special Spinach
- 1 lb spinach, cooked
- 1 teaspoon olive oil
- 3 garlic cloves, crushed
- 1 shallot, minced
- 1 tomatoes, finely diced
- 1 teaspoon balsamic vinegar
- salt and pepper
- 1 tablespoon grated parmesan cheese
- Heat olive oil in a large skillet on medium high heat.
- Add the garlic and shallots; saute for about 1 minute.
- Add spinach and tomato to the pan; stir with garlic mixture.
- Cover the pan and cook for an additional minute.
- Add balsamic vinegar.
- salt and pepper to taste.
- Sprinkle wih parmesan cheese.
- Serve immediately.
