Spinach Prosciutto Quesadillas

  1. Heat a large skillet with vegetable oil on low-medium.
  2. Spread 2 tablespoons mustard on 1 tortilla shell.
  3. Add 1/4 cup of cheese to half of one side of the tortilla.
  4. Add half the spinach, prosciutto and green pepper on top of the cheese, then top with another 1/4 cup cheese.
  5. Press down on ingredients to pack and fold tortilla into a half moon.
  6. Add to skillet and cook for 60 to 90 seconds per side or until cheese is melted.
  7. Repeat with remaining tortilla shell.
