Spinach Prosciutto Quesadillas
- 1/2 cups Vegetable Oil
- 4 Tablespoons Dijon Mustard
- 2 Whole Wheat Soft Tortilla Shells
- 1 cup Shredded Mozzarella Cheese
- 2 cups Spinach, Chopped
- 3 slices Prosciutto, Diced Thinly
- 13 cups Sweet Green Pepper, Chopped
- 1 Tablespoon Hot Sauce, Optional
- Heat a large skillet with vegetable oil on low-medium.
- Spread 2 tablespoons mustard on 1 tortilla shell.
- Add 1/4 cup of cheese to half of one side of the tortilla.
- Add half the spinach, prosciutto and green pepper on top of the cheese, then top with another 1/4 cup cheese.
- Press down on ingredients to pack and fold tortilla into a half moon.
- Add to skillet and cook for 60 to 90 seconds per side or until cheese is melted.
- Repeat with remaining tortilla shell.
