Peppy Peppers & Pasta Recipe

  1. In large pan, add in extra virgin olive oil and chopped shallots and saute/fry till tender.
  2. Add in scallops and shrimp.
  3. Saute/fry till shrimp turns pink.
  4. Remove from pan and keep hot.
  5. Add in tomatoes, parsley and seasonings.
  6. Simmer about 5 min; add in cream and cheese to desired thickness.
  7. At this point, return scallops and shrimp along with some of the peppers.
  8. Serve over cooked fettuccine.
  9. Serves 4.
