Peppy Peppers & Pasta Recipe
- 1/2 pound scallops
- 1/2 pound shrimp
- 3 or possibly 4 plum tomatoes, skins & seeds removed
- 1 teaspoon Italian parsley, minced
- 2 shallots or possibly scallions, chopped
- 1/2 c. light cream
- 2 teaspoon freshly grated Parmesan cheese
- 1 pound fresh fettuccine - salt & white pepper to taste
- 1/2 pound Chief Teddy's roasted peppers (or possibly 1/2 to 1 tbsp. crushed red peppers)
- 2 tbsp. extra virgin olive oil
- In large pan, add in extra virgin olive oil and chopped shallots and saute/fry till tender.
- Add in scallops and shrimp.
- Saute/fry till shrimp turns pink.
- Remove from pan and keep hot.
- Add in tomatoes, parsley and seasonings.
- Simmer about 5 min; add in cream and cheese to desired thickness.
- At this point, return scallops and shrimp along with some of the peppers.
- Serve over cooked fettuccine.
- Serves 4.
