Bonnie's Quick Baked Salmon Cakes Recipe
- 1 env. instant potato granules (5 serving pack)
- 1 egg, slightly beaten
- 1 c. finely minced celery
- 1 tbsp. chopped onion
- 1 can salmon (1 pound size), liquid removed, broken up
- Yellow cornmeal
- 1 tbsp. butter, melted
- Cheese Sauce (see directions below)
- Prepare mashed potatoes following directions on package, but reduce water to 1 1/4 c..
- Cold slightly.
- Stir in slightly beaten egg, celery and onion.
- Gently mix in salmon.
- Generously grease a 12 muffin c. baking pan.
- Dust pan with yellow cornmeal and spoon salmon mix into the c.. Lightly drizzle top of mix with melted butter and sprinkle with cornmeal.
- Bake at 400 degrees for 20 min and serve with melted cheese sauce.
