Pick-Your-Fruit Vanilla Shortcakes

  2. In a large bowl, whisk together flour, sugar and baking powder.
  3. Measure milk and cream in a glass measuring cup.
  4. Whisk in egg and vanilla.
  5. Make a well in center of dry ingredients.
  6. Add milk/egg mixture and combine together with a fork in a few quick strokes; mixture should be sticky.
  7. Drop batter by spoonfuls onto grease baking sheet to make 8 shortcakes.
  8. Bake at 325F for about 15-17 minutes.
  9. Let cool on a wire rack for 5 minutes before splitting them.
  10. Stewed fruit:.
  11. Gently cook your choice frozen fruit with sugar and cornstarch/water mixture over medium heat until thickened.
  12. To serve:.
  13. Split each shortcake horizontally and place the bottoms in dessert dishes.
  14. Spoon warm stewed fruit over, then top with second halves.
  15. Serve with whipped or ice cream.
