15-Minute Mediterranean-Style Chicken & Rice

  1. Heat oil in large skillet on medium-high heat.
  2. Add chicken; cook until browned on both sides.
  3. Add tomatoes with their liquid and the green beans.
  4. Bring to boil; cover.
  5. Reduce heat to medium-low.
  6. Simmer 5 min.
  7. or until chicken is cooked through (170F) and beans are crisp-tender.
  8. Stir in salt and pepper.
  9. Serve over rice.
