15-Minute Mediterranean-Style Chicken & Rice
- 1 Tbsp. oil
- 4 small boneless skinless chicken breast halves (1 lb.)
- 1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
- 1 cup frozen cut green beans
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 bags MINUTE Boil-in-Bag White Rice, prepared
- Heat oil in large skillet on medium-high heat.
- Add chicken; cook until browned on both sides.
- Add tomatoes with their liquid and the green beans.
- Bring to boil; cover.
- Reduce heat to medium-low.
- Simmer 5 min.
- or until chicken is cooked through (170F) and beans are crisp-tender.
- Stir in salt and pepper.
- Serve over rice.
