Crab, Arugula and Lemon Garlic Mayo Sandwich

  1. Place the mayonnaise in a bowl and beat in the garlic, mustard, lemon juice and a few chili flakes if you wish.
  2. Season to taste.
  3. Spread the lemon aioli onto all the slices of bread.
  4. Arrange the arugula onto 4 of the slices of bread and pile the crabmeat on top.
  5. Season to taste then sandwich with the remaining slices of bread.
  6. Press down lightly, cut on the diagonal and serve.
