Blueberry Breakfast Parfait
- 6 ounces (about 1 cup) fresh blueberries
- 2 tablespoons brown sugar
- 2 tablespoons water
- 1 teaspoon fresh lime juice
- 2 cups yogurt
- 1 cup granola
- Combine the blueberries, brown sugar, water and lime juice into a saucepan.
- Bring to a simmer over medium heat, and then continue cooking for about 6 minutes, or until the blueberries begin to pop and the liquid has thickened.
- Set aside.
- Layer the yogurt and granola into serving cups.
- Spoon the blueberry compote over the granola and yogurt and serve.
