Tuna Pot Pie
- 1 Tbsp. margarine
- 1 medium onion, chopped fine
- 2 cloves minced garlic
- 1 stalk minced celery
- 1 (11 oz.) can corn
- 1/4 tsp. black pepper
- 4 tsp. flour
- 1 c. chicken broth
- 1/2 c. skimmed milk
- 2 Tbsp. Parmesan cheese
- 2 tsp. brown mustard
- 2 tsp. lemon juice
- 2 (6 1/2 oz.) drained and flaked tuna
- 4 refrigerator biscuits, halved horizontally
- Preheat oven to 450u0b0.
- Melt margarine in large skillet.
- Add onion, garlic, celery, corn and black pepper and cook approximately 5 minutes.
- Blend in flour, chicken broth and milk. Cook, stirring constantly, until mixture thickens.
- Add cheese, mustard and lemon juice.
- Remove from heat.
- Blend in tuna.
