Rosy Red Rhubarb Cake
- 1/2 c. shortening
- 2 1/2 tsp. baking powder
- 1/4 c. brown sugar
- 3/4 c. milk
- 1 pkg. (3 oz.) strawberry gelatin
- 1 1/2 c. sugar
- 2 c. sifted flour
- 1/4 tsp. salt
- 1 egg, slightly beaten
- 6 c. rhubarb, finely diced
- 6 Tbsp. butter
- 1/2 c. flour
- Cut shortening into
- sifted
- dry
- ingredients and brown sugar as for pie crust.
- Add
- egg
- and
- milk;
- mix thoroughly. Spread in bottom and a little up
- the
- sidestf
- a
- 13
- x 9 x 2-inch pan; mixture will
- be moist.
- Top with rhubarb.tprinkle gelatin powder over.
- Mix
- butter
- with sugar and flour as for pie crust. Sprinkle over
- rhubarb.
- Bake in 350u0b0 oven for 50 minutes.
