Twice Baked Potatoes
- 2 (10 oz.) baking potatoes
- 1/4 c. sour cream
- 2 Tbsp. milk
- 1/4 tsp. salt
- 2 cooked, crumbled slices bacon
- 1 Tbsp. Bac*Os
- vegetable oil
- 2 Tbsp. butter
- 1 Tbsp. chopped green onion
- dash of pepper
- 1/4 c. shredded Cheddar cheese
- Wash potatoes; rub skins with oil.
- Bake at 400u0b0 for 1 hour. Allow potatoes to cool to touch.
- Cut a 1-inch strip, lengthwise, from top of each potato.
- Scoop out pulp.
- Combine pulp and all other ingredients, except cheese and bacon bits, in a small bowl. Beat at medium speed of electric mixer until lumps disappear. Stuff shells with mixture.
- Bake at 350u0b0 for 15 minutes.
- Add cheese and bacon bits.
- Bake until cheese melts.
