Twice Baked Potatoes

  1. Wash potatoes; rub skins with oil.
  2. Bake at 400u0b0 for 1 hour. Allow potatoes to cool to touch.
  3. Cut a 1-inch strip, lengthwise, from top of each potato.
  4. Scoop out pulp.
  5. Combine pulp and all other ingredients, except cheese and bacon bits, in a small bowl. Beat at medium speed of electric mixer until lumps disappear. Stuff shells with mixture.
  6. Bake at 350u0b0 for 15 minutes.
  7. Add cheese and bacon bits.
  8. Bake until cheese melts.
