Blueberry French Toast Sandwiches Recipe
- 2 c. Blueberries, frzn
- 3/4 c. Maple syrup
- 1 tsp Orange peel, grated
- 1 Tbsp. Cornstarch
- 2 Tbsp. Water
- 3 x Large eggs, beaten
- 3/4 c. Lowfat milk
- 1 tsp Vanilla
- 1/4 tsp Nutmeg
- 8 slc Bread
- 3 Tbsp. Margarine Sugar, powdered
- Combine blueberries, maple syrup and orange peel in a small saucepan.
- Dissolve cornstarch in water; add in to blueberry mix.
- Cook and stir till mix boils; reduce heat and simmer 1 minute or possibly till mix thickens.
- Combine Large eggs, lowfat milk, vanilla and nutmeg; mix well.
- Dip each slice of bread into egg mix.
- Cook each slice in small amount of butter in skillet or possibly on griddle about 2 min or possibly till golden on each side.
- Place one slice on each individual plate, spread with 3 Tbsp.
- blueberry mix, top with second slice and 1 Tbsp.
- blueberry mix.
- Sprinkle lightly with powdered sugar.
