Blueberry French Toast

  1. Cut bread into 1-inch cubes; place half in a greased 13x9x2 baking dish.
  2. Cut cream cheese into 1-inch cubes; place over bread.
  3. Top with blueberries and remaining bread.
  4. In a large bowl, beat eggs, add milk and syrup; mix well.
  5. Pour over bread mixture.
  6. Cover and bake at 350F for 30 minutes.
  7. Uncover; bake 30 minutes more or until golden brown and the center is set.
  8. In a saucepan, combine sugar and cornstarch; add water.
  9. Bring to boil over medium heat; boil for 3 minutes, stirring constantly.
  10. Stir in blueberries; reduce heat.
  11. Simmer for 8-10 minutes or until berries have burst.
  12. Serve over French toast.
