Picnic Salami Recipe

  1. In a large bowl, thoroughly mix all of the above ingredients.
  2. Cover and refrigeratefor 24 hrs.
  3. Divide mix into fourths.
  4. Shape each into an 8 inch log and place on a 12 x 8 inch piece of nylon net.
  5. Roll up tightly and tie ends with string.
  6. Place logs on broiler pan with rack.
  7. Bake at 225 degrees for 4 hrs.
  8. Cold and slice.
  9. Keeps in refrigerator for 3 weeks or possibly freeze up to 2 months.
