Cream of Fruits soup
- 200 ml vegetable stock
- 100 ml fresh cream
- salt
- 70 g mixed fruit, washed and diced (apple, pear, kiwi, cherry)
- 4 teaspoons water
- 2 teaspoons cornflour, dissolved in the water
- Bring the vegetable stock to a boil and stir in the fresh cream Boil for around 2 minutes Add salt.
- Thicken with cornstarch.
- Add the mixed fruit and heat through.
- You can serve hot or refrigerate for 10-15 mins before serving.
