Blackberry Wine Cake
- 1 box White Cake Mix
- 1 box Blackberry Jello (3oz size) or Black Cherry
- 1/2 cup Vegetable oil
- 4 eggs
- 1/2 cup butter or margarine softened
- 1 cup powdered sugar (confectioner sugar )
- 1 1/2 cup Blackberry Wine
- 1/2 cup Chopped Pecans
- Preheat oven to 325.
- Grease a 9 or 10 inch bunt pan or a tube pan.
- Put chopped pecans on bottom of pan.
- Combine cake mix dry blackberry jello, eggs, oil and 1 cup blackberry wine.
- Beat for 2 minutes , then pour batter over the top of pecans.
- Bake at 325 for 40 to 45 minutes or until cake test done.
- FOR BLACKBERRY WINE GLAZE .....
- Mix together powdered sugar with 1/2 cup blackberry wine and softened butter.
- Beat until smooth.
- Pour half of the blackberry wine glaze over the top of cake while still warm.
- Let sit for 10 minutes , then remove cake from pan.
- allow to cool fully before pouring the remaining glaze on top of cake.
