Pork And Sauerkraut
- 1 1/2 or 2 lb. boneless pork roast, tenderloin roll or a country cut rib
- 1 lb. bag fresh sauerkraut
- 1/2 lb. frozen home-style noodles or or 1 egg batch homemade noodles
- 1 Tbsp. brown sugar
- 1 Tbsp. chopped onion
- 1 c. water with 2 beef bouillon cubes or 1 can beef broth
- Cook meat, waterless, in heavy Dutch oven or in electric skillet on low until very tender.
- Remove meat to plate.
- Scrape brown drippings loose.
- Add water, bouillon or broth and sauerkraut.
- Cover and continue cooking.
- Cut meat into bite-size pieces and add to sauerkraut with brown sugar and onion.
- Cook 1 hour.
- If necessary, add additional water/bouillon or broth.
- Last 25 minutes add noodles.
- Stir occasionally until noodles are tender.
- Can be made with Polish or any sausage.
