Perfect Popcorn

  1. Heat oil and salt in a large saucepan over medium-high heat.
  2. Put 3 or 4 popcorn kernels in the oil and put on the lid.
  3. When the kernels pop, dump the rest of the popcorn in the pan, remove from heat and count to 30.
  4. Put back on the burner.
  5. The popcorn should start popping fairly quickly.
  6. Keep the lid slightly ajar and jiggle the pan so the kernels do not burn.
  7. Once the popping slows to several seconds between pops, remove from heat and dump into a bowl.
  8. Place the butter in the hot pan until melted.
  9. Pour over the popcorn and mix well.
