Wild Rice Chicken Casserole
- 2 medium skinless, boneless chicken breasts
- 1 cup brown rice
- 1/2 cup long grain wild rice
- 1 tsp each--- garlic powder, onion powder, cumin, chili powder
- 1 can -- 10 ounce can cream of chicken soup
- 1 can 15 ounce Rotel tomatoes and chillies
- 1/2 cup sour cream
- 3/4 cup cubed Velveeta type cheese
- 1/2 cup shredded colby jack cheese, optional
- Gather your ingredients
- Cook chicken till no longer pink inside
- Cut chicken into bite size pieces
- Mix two rices together, cook until tender
- Put rice into large mixing bowl
- Add seasonings, tomatoes, soup, and sour cream
- Mix well,
- Add cubed chicken and stir
- Add velveeta, stir
- Place mixture into glass baking dish
- Sprinkle shredded cheese in top
- For microwave, set on 80% power, cook for 10 minutes, or until cheese is melted on top
- Serve and enjoy
