Cauliflower With Cheese And Chili Sauce

  1. Cook cauliflower in a small amount of boiling salted water in a large saucepan for 15 to 20 minutes or until tender; drain.
  2. Cook onion, green or red pepper in 1/4 cup water for 5 minutes or until tender in a covered saucepan.
  3. Stir together milk and flour until smooth and stir into vegetable mixture.
  4. Cook and stir until thickened and bubbly, then continue to cook for 1 minute more. Stir in cheese until melted.
  5. Stir in green chili peppers and hot pepper sauce; heat through.
  6. Place cauliflower on a serving plate and pour some of the cheese sauce over the top.
  7. Pass the remaining sauce.
  8. Makes 6 servings.
