Sweet Potato Pancake with Apple-Cream Cheese Sauce
- 1/2 cup PHILADELPHIA Fat Free Cream Cheese, softened
- 1 cup applesauce
- 2 Tbsp. ground cinnamon
- 3 qt. sweet potatoes, peeled, grated
- 48 each egg whites
- 3 cups flour
- Mix cream cheese, applesauce and cinnamon until blended.
- Refrigerate until ready to use.
- Combine remaining ingredients; shape into 24 patties (or shape into 1 patty for trial recipe), using a heaping 1/2 cup potato mixture for each.
- For each serving: Cook 1 patty in nonstick skillet, sprayed with cooking spray, on medium heat 4 min.
- on each side or until golden brown on both sides.
- Serve with about 1 Tbsp.
