Camembert chicken wrapped in pancetta

  1. Lay chicken on the bench, smooth side down.
  2. Spread with pesto and top with wedge of camembert and semi-sundried tomatoes.
  3. Season to taste.
  4. Roll up the fillet and cover with a piece of pancetta.
  5. Secure with a wooden skewer or tie up string.
  6. Place in a baking dish and drizzle with oil.
  7. Bake at 200C for 18-25 minutes or until cooked through and pancetta is crispy and golden.
  8. Serve with your favourite vegetables.
