Camembert chicken wrapped in pancetta
- 4 (150-200g each) chicken fillets, thinly pounded until even thickness
- 2 tablespoons CLASSICO Traditional Basil Pesto Sauce and Spread
- 125g KRAFT* Camembert, sliced
- 50g semi sun-dried tomatoes
- 16 thin slices round pancetta / bacon
- 1 tablespoon olive oil
- Lay chicken on the bench, smooth side down.
- Spread with pesto and top with wedge of camembert and semi-sundried tomatoes.
- Season to taste.
- Roll up the fillet and cover with a piece of pancetta.
- Secure with a wooden skewer or tie up string.
- Place in a baking dish and drizzle with oil.
- Bake at 200C for 18-25 minutes or until cooked through and pancetta is crispy and golden.
- Serve with your favourite vegetables.
