Progressive Farmer Fruit Cake
- 1 pkg. yellow cake mix
- 4 eggs, unbeaten
- 1 tsp. orange juice or extract
- 1/2 lb. candied green pineapple, cut in narrow strips
- 1/2 lb. red candied cherries, chopped
- 4 c. pecans, some halves and some chopped
- 1/2 c. flour
- 1/2 c. applesauce
- 1 tsp. salt
- 2 c. chopped dates
- Empty cake mix into bowl and add applesauce, eggs, salt and juice.
- Beat 3 minutes or until creamy and smooth.
- Combine fruits and nuts and dredge them in the flour.
- Stir into the batter.
- Line 2 (8 x 4 x 3-inch) loaf pans with a triple thickness of waxed paper and grease well.
- Pour batter into pans and bake at 275u0b0 for 2 hours and 45 minutes.
- Cool cakes on a rack until thoroughly cool. Remove from pans leaving paper attached to cakes.
- Wrap cakes in aluminum foil and refrigerate or freeze until ready to use.
- Yields 2 large or 4 small loaves.
