Progressive Farmer Fruit Cake

  1. Empty cake mix into bowl and add applesauce, eggs, salt and juice.
  2. Beat 3 minutes or until creamy and smooth.
  3. Combine fruits and nuts and dredge them in the flour.
  4. Stir into the batter.
  5. Line 2 (8 x 4 x 3-inch) loaf pans with a triple thickness of waxed paper and grease well.
  6. Pour batter into pans and bake at 275u0b0 for 2 hours and 45 minutes.
  7. Cool cakes on a rack until thoroughly cool. Remove from pans leaving paper attached to cakes.
  8. Wrap cakes in aluminum foil and refrigerate or freeze until ready to use.
  9. Yields 2 large or 4 small loaves.
