Breath O' Spring Salad

  1. Drain pineapple and add water to juice to make 1 3/4 cups liquid.
  2. Heat to boiling.
  3. Dissolve lemon gelatin in pineapple liquid and add 1/2 teaspoon salt.
  4. Chill to consistency of unbeaten egg white.
  5. Add carrots and pineapple.
  6. Turn into lightly oiled mold and chill until firm.
  7. Soften unflavored gelatin in cold water; dissolve in hot water.
  8. Combine remaining ingredients, blending well.
  9. Pour over pineapple layer; chill until firm. Garnish with salad greens.
