Carolyn & Nate's Caramel Apple Cheesecake

  1. Crust:.
  2. Combine Flour, margarine, sugar and egg yolk.
  3. Press into the bottom and slightly up the side of a greases 9-inch spring form pan; set aside.
  4. Cheesecake:.
  5. Preheat oven to 325F
  6. Melt butter in a skillet and saute apples until
  7. slightly golden.
  8. Arrange apples on crust.
  9. Combine caramels and milk and melt over low heat or microwave on low power 4
  10. minutes.
  11. Drizzle over apples.
  12. In a large bowl cream cheese and sugar until
  13. mixture is light and fluffy.
  14. Beat in eggs, one at a time, add vanilla.
  15. Pour mixture over apple-caramel mixture and bake for 35-38 minutes.
  16. Cool on
  17. a wire rack, then chill.
  18. Garnish with additional caramel sauce and whipped
  19. cream, if desired.
  20. Serves 12.
