Cajun Shrimp with Fettucine
- 2 cups sliced mushrooms
- 1 tbsp. butter
- margarine
- 2 tbsp. sliced green onions
- 1/2 cup clam juice
- 14 oz. peeled and deveined uncooked shrimp
- 1/2 plain yogurt (lowfat
- regular)
- 1/4 cup sour cream
- 1 oz. grated Parmesan cheese
- 1 lb. fettucine/pasta
- Fresh parsley for garnish
- 1/4 tsp. salt
- 1/4 tsp. paprika
- 1/8 tsp. white, red and black pepper
- 1/8 tsp. thyme
- 1/8 tsp. oregano
- 1/8 tsp. onion powder
- Mix cajun spices in small bowl.
- Heat water for pasta.
- Melt butter in a large skillet.
- Saute mushrooms and green onions, about 4 minutes.
- Add clam juice.
- Bring to a boil.
- Add shrimp.
- Cook three minutes, tossing frequently, until shrimp are pink.
- Remove from heat.
- Stir in yogurt, sour cream, parmesan cheese and spice mix.
- Cook pasta al dente.
- Place in serving bowl.
- Add shrimp mixture on top.
- Sprinkle with parmesan and fresh parsley.
