Speedy Dinner Rolls

  1. In a large bowl, 1 1/2 cup flour, xanthum gum, sugar, yeast, & salt.
  2. Stir in water, oil, & egg until blended.
  3. Stir in enough of the remaining flour (about 1 cup) to form a soft dough.
  4. On a floured surface, knead dough until smooth & elastic, about 8 minutes, adding more flour to prevent sticking.
  5. Shape into a ball.
  6. Place in a large oiled bowl, turning to coat.
  7. Cover loosely with a damp cloth.
  8. Let rise in a warm place for 15 minutes.
  9. Spray a 9-inch square baking pan with cooking spray.
  10. Punch down dough.
  11. Place in prepared pan, patting to an even thickness.
  12. Cut into 12-16 squares.
  13. Fill a large shallow pan with 1 inch of boiling water.
  14. Place a wire rack on top.
  15. Place the pan of rolls on rack, cover with a damp cloth.
  16. Let rise for 20 minutes.
  17. Preheat oven to 400F.
  18. Sprinkle top of rolls lightly with flour, if desired.
  19. Bake until rolls sound hollow when tapped, about 10-15 minutes.
  20. Place pan on wire rack & cool for 10 minutes.
  21. Serve warm.
