Mascarpone Onion Dip
- 1 Tablespoon Mayonnaise (Or To Taste)
- 1/4 cups Sour Cream
- 38 cups Mascarpone Cheese
- 3 leaves Basil, Chiffonaded
- 1/4 Tablespoons Onion Powder (Or 1 Chopped Caramelized Onion)
- 1/4 Tablespoons Garlic Powder (Or, Two Cloves Fresh, Minced Garlic)
- 1/4 teaspoons Cayenne Pepper
- 1 teaspoon Salt And Pepper, to taste
- 3 strips Bacon
- 2 bunches Chives
- 2 bunches Cilantro
- 5 pieces Pancetta, Browned
- 13 cups Parmesan (Or Other Cheese, Like Blue Cheese, Feta, Fontina, Etc.)
- 1.
- Add mayo, sour cream, and mascarpone to bowl; mix well to combine, until smooth.
- 2.
- Add in basil, onion, garlic, cayenne, salt and pepper; stir until smooth.
- Taste.
- Add more of any ingredients to taste.

- Fold in any of the optional mix-ins, or any you come up with.
- I usually stick with bacon, onion and garlic, have used pancetta and Parmesan, which was very good, as well.

- Chill for an hour, or until youre ready to eat it.
- 5.
- Serve with Pita Chips.
- Ive made this a day ahead, and it turned out fine.
- Ive also served this hot, with pancetta, Parmesan and mozzarella on top.
