Mashed Squash
- 1 medium butternut squash
- 2 tablespoons butter
- 1 pinch nutmeg
- 1 dash salt and pepper
- Heat oven to 400 degrees F and line a baking sheet with foil.
- Cut the top and bottom off the squash.
- Cut into quarters.
- Put the pieces skin side up and bake for about 45 minutes.
- Let the squash sit until it is cool enough to handle and scoop and the seeds.
- Scoop out the flesh into a bowl and add the butter and nutmeg.
- Mash with a potato masher and add salt and pepper to taste.
