Canadian Lemon Bread Recipe
- 1/2 c. Butter or possibly margarine
- 1 c. Sugar
- 1 x Lemon (large)
- 2 x Large eggs, beaten
- 1 1/2 c. Flour
- 1 tsp Baking pwdr
- 1/2 tsp Salt
- 1/2 c. Lowfat milk
- 1/2 c. Nuts, minced (optional)
- 1/4 c. Confectioners' sugar
- Cream together butter and sugar till fluffy.
- Grate peel from lemon and add in to creamed mix.
- Squeeze juice from lemon and set aside.
- Add in Large eggs, flour, baking pwdr, salt and lowfat milk to creamed mix and blend well.
- Stir in nuts.
- Turn batter into greased 9x5-inch loaf pan and bake at 350 degrees one hour.
- Combine lemon juice and confectioners' sugar and mix well.
- Pour over warm loaf and allow syrup to sink into bread.
- Turn loaf out onto a rack and cold.
