Chupe De Mariscos(Shellfish)
- shrimp, mussels, clams or lobster (reserve liquid)
- 1/2 Tbsp. onion, finely chopped
- 2 Tbsp. butter
- 1 1/2 c. soft bread crumbs
- 1 c. milk
- 4 Tbsp. soft cheese
- 1 Tbsp. butter
- 2 egg yolks
- salt, pepper and cayenne
- water
- paprika
- Boil various shellfish for 30 minutes and reserve the water in which they were cooked.
- Fry onion in 2 tablespoons of butter and paprika.
- Add bread crumbs, milk and a little of the liquid from the shellfish.
- Simmer until the consistency of sauce.
- Add soft cheese, 1 tablespoon butter, egg yolks, salt, pepper and cayenne. Place the shellfish in the bottom of a clay casserole.
- Pour the sauce over the top and bake, covered, in a moderate oven for 40 minutes.
- Place uncovered under the broiler for the last 10 minutes.
- If desired, top with hard-boiled eggs and mashed potatoes.
