Chupe De Mariscos(Shellfish)

  1. Boil various shellfish for 30 minutes and reserve the water in which they were cooked.
  2. Fry onion in 2 tablespoons of butter and paprika.
  3. Add bread crumbs, milk and a little of the liquid from the shellfish.
  4. Simmer until the consistency of sauce.
  5. Add soft cheese, 1 tablespoon butter, egg yolks, salt, pepper and cayenne. Place the shellfish in the bottom of a clay casserole.
  6. Pour the sauce over the top and bake, covered, in a moderate oven for 40 minutes.
  7. Place uncovered under the broiler for the last 10 minutes.
  8. If desired, top with hard-boiled eggs and mashed potatoes.
