Spring Pea Soup

  1. Mix all ingredients except sour cream in large saucepan.
  2. Bring to boil on medium-high heat.
  3. Reduce heat to medium-low; simmer 15 min.
  4. or until vegetables are tender.
  5. Transfer vegetable mixture to blender container in small batches; cover.
  6. Blend until smooth; pour into medium bowl.
  7. Repeat until all of the vegetable mixture is pureed.
  8. Stir in sour cream.
  9. Serve warm sprinkled with mint.
