Sausage and Peppers(Crock pot or stove top!)
- 1 lb hot Italian pork sausage (feel free to substitute with turkey sausage, or sweet Italian sausage if spice isnt your thing!)
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 2 yellow onions, sliced
- 1 Splash of balsamic vinegar
- 1/2 tsp dried oregano
- 1 cup roughly chopped fresh basil leaves
- 4 -6 garlic cloves, chopped
- 2 tsp tomato paste
- 15 oz can of diced tomatoes
- 24 oz jar of your favorite tomato sauce
- 1/4 tsp red pepper flakes (optional)
- 1 freshly chopped parsely and/or parmesan to top
- CROCKPOT VERSION- In a saute pan brown your sausages on all sides, dont worry about cooking them through, just get a nice color on them.
- Once browned add a splash of balsamic vinegar to the pan and use a wooden spoon to scrape up the bits.
- Poor the sausages and and drippings into your crockpot.
- Add the rest of the ingredients to your crockpot, Set it for medium-high for 6-8 hours.
- STOVETOP VERSION-In a dutch oven or similar sized pot brown your sausages on all sides, dont worry about cooking them through, just get a nice color on them.
- Once browned add a splash of balsamic vinegar to the pan and use a wooden spoon to scrape up the bits.
- Add your onions, peppers, and garlic to the pot, cook until everything begins to soften.
- Add the rest of the ingredients, stir together and let it lightly simmer on the stove on medium low for 1-2 hours.
