Herb & Garlic Penne with Summer Squash
- 6 cups Penne Noodles, Cooked & Drained Per Package Directions
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 teaspoons Red Chili Flakes
- 3 cloves Garlic, Minced
- 1 whole Large Green Zucchini, Sliced Very Thin (approx 1 1/2 Cups)
- 1 whole Large Yellow Zucchini, Sliced Very Thin (approx 1 1/2 Cups)
- 3/4 cups Shredded Parmesan Cheese (fresh)
- 1/4 cups Fresh Parsley, Rough Chopped
- 2 Tablespoons Fresh Basil, Rough Chopped
- 1.
- Heat oil in a large frying pan or saute pan over medium heat.
- 2.
- Add chili flakes, garlic and zucchini and cook for 5 minutes or until zucchini is tender, stirring often.
- 3.
- Add in the cooked pasta and toss together.
- Add Parmesan and fresh herbs and mix together.
- Turn off heat and stir until pasta is warmed through.
- 4.
- Season with salt and pepper.
- Top with more fresh herbs and Parmesan.
