Chicken Stir-Fry

  1. Combine cornstarch, garlic, onions and salt.
  2. Add chicken and toss to coat the chicken.
  3. Prepare broccoli (steam) and drain in a large skillet.
  4. Add 1/2 the oil to chicken mixture.
  5. Stir-fry until chicken loses its color, about 2 minutes on high heat.
  6. Add oil and pepper.
  7. Stir-fry 1 minute.
  8. Add broccoli.
  9. Stir-fry.
  10. Add chicken broth.
  11. Simmer 1 minute.
  12. Serve over rice (hot).
  13. I add cut onions, sliced potatoes, cabbage, snow peas and yellow squash.
