Red, Gold and Green Asparagus- Tomato- Pasta Salad

  1. Cook pasta according to package directions.
  2. Drain and set aside.
  3. Meanwhile prepare asaparagus: Rinse under water, cut off the ends and peel the bottom 1/3 of each stalk.
  4. Cut into 2 cm (1/2 inch) pieces.
  5. Heat the oil in a pan.
  6. When its hot add the asparagus and sautee over medium heat for 4 minutes.
  7. Sprinkle with sugar and sautee another minutes.
  8. Sprinkle with pepper.
  9. In a big bowl combine cherry tomatoes, asparagus, feta and pasta.
  10. Toss to mix and sprinkle with pine nuts or sunflower seeds if using.
  11. Enjoy.
