Danish Coffee Cake(Makes 4 Coffee Cakes)

  1. Mix first 4 ingredients as pie dough.
  2. Dissolve yeast in 1/4 cup lukewarm water and add milk and beaten egg yolks.
  3. Add this to dry ingredients.
  4. Mix and chill thoroughly.
  5. Divide in 4 parts. Roll each out quite thin.
  6. Have ready 3 beaten egg whites (with a little sugar), brown sugar, melted butter and nuts.
  7. After rolled out, smear all over with melted butter.
  8. In middle of rectangle, put egg whites with a little sugar.
  9. Add layer of apricot, prune or almond filling.
  10. Then add a layer of brown sugar.
  11. Fold edges toward center over filling.
  12. Put egg whites, brown sugar and nuts on top of coffee cakes. Let rise about 2 1/2 hours.
  13. Bake at 350u0b0 or 325u0b0 until light brown all over.
