Mexican Pasta Squares
- 1 (8 oz.) pkg. medium width egg noodles
- 1 c. milk
- 1 c. salsa (hot or mild)
- 4 eggs, slightly beaten
- 1/2 c. chopped green pepper
- 1/4 c. pitted ripe olives, sliced
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. shredded Cheddar cheese
- 1/2 c. shredded Monterey Jack cheese
- Preheat oven to 400u0b0.
- Butter a 9-inch square baking dish. Cook noodles according to directions, rinse and drain; set aside. Combine milk, salsa, eggs, green peppers, salt and pepper.
- Stir in noodles.
- Pour mixture into dish and bake for 15 to 20 minutes or until set.
- Sprinkle cheese over top and return to oven and bake until cheese melts (about 3 minutes).
- Cool on wire rack about 1 hour.
- Cut in squares and serve.
