vegetable winter crisp
- cooked pumpkin pie filling
- mashed potatoes
- mash pumpkin and potato together.
- Add some butter,milk and seasonings as normal mash Lay out on a fairly shallow ovendish, maybe like a pie dish.
- Score with a fork to a nice pattern, grate some fresh nutmeg on top and drizzle a little olive oil.
- Grill until golden.
- An option with this mixture is to use potato, parsnip and carrot mashed, and leave out the pumpkin.
- Equally delicious.
