HEALTHY LIVING Mexican Lasagna with Cottage Cheese
- 1 lb. lean ground chicken
- 1-2/3 cups TACO BELL Thick & Chunky Salsa
- 1 can (8.75 oz.) corn, drained
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 10 corn tortillas (6 inch)
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
- Heat oven to 375F.
- Cook chicken in large skillet on medium heat until done, stirring frequently.
- Add salsa, corn and seasonings; mix well.
- Layer 1/3 of the chicken mixture, and half each of the tortillas and cottage cheese in 13x9-inch baking dish sprayed with cooking spray.
- Repeat layers.
- Cover with remaining chicken mixture.
- Sprinkle with cheddar.
- Bake 30 min.
- or until heated through.
